Ingredients

Salmon Salad

  • 1 pound salmon, cooked, cooled, and flaked
  • ½ cup diced bell pepper, any color
  • 2 tablespoons mayonnaise
  • 2 tablespoons chopped parsley or cilantro
  • 2 tablespoons lemon juice
  • 1 teaspoon dried dill
  • ½ teaspoon paprika
  • ½ teaspoon mustard powder
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper

Sandwiches

  • 12 mini croissants
  • Sliced tomatoes, optional
  • Green leaf lettuce, optional

Instructions

Prepare Salmon Salad

  1. In a large bowl, gently mix together all ingredients. Set aside.

Prepare Sandwiches

  1. Slice the croissants in half and fill with prepared salmon salad. Top with tomatoes and lettuce if desired.

Recipe Notes

Salmon salad can be prepared beforehand and kept refrigerated for a few days. Assemble prior to serving.
