Ramadan is fast approaching, and these Salmon Salad Sandwiches will make the perfect Iftar (meal at sunset) accompaniment!
I am a big fan of finger foods, and these sandwiches pack such great flavors and textures into small bundles that are sure to impress! Also, one of my favorite aspects of these sandwiches is that they’re a great way to repurpose leftover salmon. The salad itself keeps well if made in advance, so it’s perfect for those times when you’re in a pinch!

Salmon Salad Sandwiches
Ingredients
Salmon Salad
- 1 pound salmon, cooked, cooled, and flaked
- ½ cup diced bell pepper, any color
- 2 tablespoons mayonnaise
- 2 tablespoons chopped parsley or cilantro
- 2 tablespoons lemon juice
- 1 teaspoon dried dill
- ½ teaspoon paprika
- ½ teaspoon mustard powder
- ½ teaspoon salt
- ½ teaspoon ground black pepper
Sandwiches
- 12 mini croissants
- Sliced tomatoes, optional
- Green leaf lettuce, optional
Instructions
Prepare Salmon Salad

In a large bowl, gently mix together all ingredients. Set aside.
Prepare Sandwiches

Slice the croissants in half and fill with prepared salmon salad. Top with tomatoes and lettuce if desired.
Recipe Notes
Salmon salad can be prepared beforehand and kept refrigerated for a few days. Assemble prior to serving.
