I had one of those nights this past week. You know, those nights where you’re just so exhausted from the normal everyday routine. For nights where I’m just too burned out to want to stand in front of the stove and make an intricate and detail-oriented meal, I rely on a stash of recipes that take less attention span than that of a toddler’s.
Because seriously, after a long day and with my son finally off to bed for the night, I don’t have the patience to cook and wash a million dishes.
This fettuccine alfredo comes courtesy of good ol’ Emeril Lagasse. It’s a one-pot wonder and tastes like a million bucks BAM! 😉
Fettuccine Alfredo
Yield: 4 Servings
Ingredients:
- 1 pound dried fettuccine pasta
- 4 tablespoons unsalted butter
- 1 cup heavy whipping cream
- Salt, to taste
- Ground black pepper, to taste
- Red pepper flakes, to taste, optional
- ¼ cup water
- 1 cup parmesan cheese, grated
- Fresh or dried parsley, for garnish
Directions:
Cook pasta in boiling salted water until al dente. Drain and set aside.
Melt butter over medium-high heat. Add heavy whipping cream, salt, black pepper, and red pepper flakes and bring to a boil. Cook for 3 to 5 minutes, or until the sauce has slightly reduced and thickened.
Add pasta, water, and parmesan cheese. Remove from heat and mix until thoroughly combined. Garnish with parsley.

I get you on those nights. Don’t worry, we all have those. And that alfredo looks so so good. I love the plate. Haha I love white 😀
This reminds me of why Im scared of trying this dish. My sister and her friends once went to a restaurant where they ordered two dishes of this dish without ever having tried it. They HATED it. It was all a waste lmao. We Pakistanis are not a big fan of cheese. It makes me puke when it’s not on a pizza 🙁 Haha it’s better I don’t try it ;P

Thanks! LOL, I totally understand what you’re saying. My husband spent his first 10 years in Pakistan before moving to the States and he too hates cheese. I’m usually the only one here that eats cheese lol, so I always have tons of leftovers 🙂

This looks soooo good omg. There are so many things one can do with pasta, I love that it’s so fast and filling. (I also hate washing dishes, so one pot recipes are a blessing) 🙂

Thanks! And one-pot recipes are totally the way to go lol 🙂
