Growing up in California, one of my favorite restaurants to visit was a placed called Fresh Choice. It was a buffet style establishment, with areas set up for bread, soup, desserts, and the longest salad bar I’ve ever seen.
This asian inspired chicken salad with soy ginger dressing is an ode to one of my favorite salads that was served there. The original didn’t have any chicken, but I like to add it (when I have it on hand) because it adds some bulk to the dish, thus making it more of an entree as opposed to a side. If you follow a vegetarian diet, simply omit the chicken.
Asian Chicken Salad with Soy Ginger Dressing
Ingredients
Dressing
- 3 tablespoons rice vinegar
- 3 tablespoons neutral flavored oil
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 1 teaspoon minced ginger
- ½ teaspoon minced garlic
Salad
- Cooked chicken, shredded
- Romaine or iceberg lettuce, shredded
- Red cabbage, shredded
- Carrots, shredded
- Mandarin oranges
- Spring onions, sliced
- Cilantro, chopped
- Sliced almonds
- Fried wonton strips
Instructions
Prepare Dressing

In a bowl, whisk together all ingredients until smooth. Refrigerate until ready to use.
Prepare Salad

In a large bowl mix together desired quantities. Drizzle with prepared dressing.

Vegetarian option: omit chicken.
