Chai Spiced Banana Bread

Ingredients

Chai Spice

  • ¾ teaspoon ground cardamom
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground allspice

Banana Bread

  • 2 ¼ cup all-purpose flour
  • 1 ½ teaspoons Chai Spice
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 3 ripe bananas mashed (approximately 2 cups)
  • 2 large eggs
  • ½ cup full-fat yogurt
  • ¼ cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar
  • ½ cup brown sugar

Glaze

  • 1/2 cup powdered sugar
  • ¼ teaspoon vanilla extract
  • Chai Spice
  • 1 – 1 ½ teaspoons whole milk

Instructions

Prepare Chai Spice

  1. In a small bowl, whisk all ingredients together. Set aside.

Prepare Banana Bread

  1. Preheat oven to 350˚F and set aside a greased loaf pan.
  2. In a medium bowl, whisk together all-purpose flour, prepared chai spice, baking soda, and salt. Set aside.
  3. In a large bowl, combine mashed bananas, yogurt, melted butter, and eggs and mix well. Add granulated sugar and brown sugar and mix to combine. Gently add flour mixture, and fold until just combined.
  4. Transfer batter to prepared loaf pan and bake until an inserted toothpick comes out clean, about 60 to 70 minutes. Allow the banana bread to rest for 15 minutes, then transfer to a wire rack and cool completely.

Prepare Glaze

  1. Combine powdered sugar, vanilla, remaining Chai Spice, and whisk enough milk to create a thick and pourable glaze. Pour over cooled bread and allow it to set before serving.
