Asian Chicken Salad with Soy Ginger Dressing

  • 3 tablespoons rice vinegar
  • 3 tablespoons neutral flavored oil
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon minced ginger
  • ½ teaspoon minced garlic


  • Cooked chicken, shredded
  • Romaine or iceberg lettuce, shredded
  • Red cabbage, shredded
  • Carrots, shredded
  • Mandarin oranges
  • Spring onions, sliced
  • Cilantro, chopped
  • Sliced almonds
  • Fried wonton strips


Prepare Dressing

  1. In a bowl, whisk together all ingredients until smooth. Refrigerate until ready to use.

Prepare Salad

  1. In a large bowl mix together desired quantities. Drizzle with prepared dressing.

Vegetarian option: omit chicken.
