Middle Eastern Chicken Skewers/ Shish Tawook

Ingredients

  • 2 pounds boneless chicken breast or thighs, cut into 2-inch cubes
  • ¼ cup yogurt
  • 4 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste, optional
  • 2 teaspoons paprika
  • ½ teaspoon oregano
  • ½ teaspoon salt
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon red chili powder
  • ¼ teaspoon allspice powder
  • ¼ teaspoon ground black pepper

Instructions

  1. Combine all ingredients except chicken together in a bowl and mix well. Add chicken and mix well. Refrigerate for at least 4 hours (overnight is best).
  2. Thread chicken onto skewers. Set aside.
  3. Heat a lightly oiled pan over medium heat. Cook chicken until done, about 5 to 8 minutes on each side.
