Chickpea Pomegranate Salad

Ingredients

  • 1 cup pomegranate arils
  • 1 cup chickpeas
  • ½ cup diced cucumber
  • ½ cup diced red onion
  • 2 tablespoons chopped cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt, to taste
  • Ground black pepper, to taste

Instructions

  1. In a large bowl, mix all ingredients. Salad is ready to be served.
