I love a good sandwich, and this one is one of my absolute favorites!
We start with a hearty bread that can hold up our toppings (I like a ciabatta roll, but an Italian or French baguette would work well too), slather it with a sriracha aioli, and top it with a mild and melty cheese and diced chicken, veggies, and if you’re a baddie, some red pepper flakes😎. The whole thing goes under the broiler for a few minutes, and the resulting open-faced-sandwich is nothing short of mindblowingly amazing!
Spicy Chicken Toasties
Ingredients
Sriracha Aioli
- ¼ cup mayonnaise
- 1 tablespoon sriracha sauce
- ¼ teaspoon garlic powder
Chicken Toasties
- 4 ciabatta rolls, halved (Italian or French baguette works well too)
- 8 slices provolone cheese
- 1 pound boneless chicken, cooked and diced
- 1 bell pepper, any color, diced small
- Chopped cilantro, for garnish
- Red pepper flakes, optional, for garnish
Instructions
Prepare Sriracha Aioli

Combine all ingredients in a small bowl and whisk together until smooth. Set aside.
Prepare Spicy Chicken Toasties

Place bread on a baking sheet, and spread a generous amount of the prepared aioli on each slice.

Top with cheese, chicken, and bell peppers. Place the tray under the broiler, and cook for 2 to 3 minutes, until the cheese has melted and the edges of the bread are golden brown. Remove from oven and garnish with cilantro and red pepper flakes (if desired).
Recipe Notes
Leftover sriracha aioli can be kept refrigerated.
All components of these toasties can be prepared and kept refrigerated beforehand.

Can you please explain how you make the chicken?

Wsalam! I just season some boneless chicken with salt and pepper, and cook it on a frypan with minimal oil until it’s cooked through. Once it’s cooled, I just dice it up. You can totally use leftover chicken here as well (I would avoid anything that’s heavily spiced because it might not work well with the overall flavors of the sandwich)!
