A couple of months back I started a series in which I introduce you to some of my favorite bloggers. Today, Ambreen of Simply Sweet n’ Savory is our guest here at My Ninja Naan. I “met” Ambreen a few years ago, when I stumbled upon her blog searching for Cake Rusk. I have been hooked since then, and there is no looking back 🙂 The thing that makes me come back to Ambreen’s blog time and time again is the fact that she is one of the few bloggers who shares authentic Pakistani recipes, with actual measurements. I’ve had great success with her recipes, and she proves time and time again that her recipes are tried and true.

It’s a pleasure to be guest posting for my sweet friend Henna today who has always been so kind and supportive to me. Thank you so much Henna for giving me this opportunity to share a recipe with your readers.
I’m sharing a quick bread recipe that is perfect for breakfast, afternoon tea or even as a dessert. Quick breads are easy and quick to make, as compared to yeast breads that require kneading or long rising time. You can try different flavor combinations by adding dried fruits ( raisins, cherries, apricots, cranberries, etc. ), nuts, chocolate chips, spices ( cinnamon, cardamom, nutmeg, ginger, etc.) to it. I’ve used a combination of fresh orange juice and dates to make this moist and delicious bread. Here’s the recipe :
Date and Orange Quick BreadMakes : 1 loaf
Ingredients :
For Bread :
- 2 cups plain flour
- 1 tbsp. baking powder
- 1 cup caster sugar
- 1/4 tsp. salt
- 1 tbsp. grated orange zest
- 1/2 cup chopped dates
- 2 eggs, at room temperature
- 3/4 cup fresh orange juice
- 1/2 cup unsalted butter, melted and cooled
For Glaze :
- 1/4 cup icing sugar
- 1 – 1 1/2 tbsp. orange juice
Method :
- Preheat oven to 180 C / 350 F. Grease and line an ( 9 x 4 inchs ) loaf pan.
- In a large bowl, sift together flour and baking powder. Whisk in sugar, salt and orange zest.
- Add the chopped dates and toss gently to distribute evenly.
- In a separate bowl, combine eggs, orange juice and butter; mix well.
- Fold the wet ingredients together with the dry until just combined ( do not over-mix ).
- Pour the batter into the prepared pan. Bake for ( 45 – 55 minutes ) or until a skewer inserted into the center comes out clean.
- Let stand in the pan for 10 minutes, then turn out onto a wire rack to cool.
- Serve this warm with a sprinkle of icing sugar or drizzle orange glaze or melted chocolate over the top of cooled bread.
- For Glaze, mix icing sugar and enough orange juice in a small bowl for desired glazing consistency. Drizzle glaze evenly over top of cooled bread. Let the glaze set for 10 minutes, then slice and serve.

It’s great because it’s a great way to use up leftover dates! I always have dates in my fridge 🙂
