I cannot resist the heavenly combination of apples and cinnamon. There is just something so divine about the pairing of both that I just can’t help myself. This oatmeal is a combination of my obsession with apple+cinnamon and my newfound obsession with oatmeal. It’s almost like having dessert for breakfast, minus the guilt 😉
Apple and Cinnamon Baked Oatmeal
Yield: 4 Servings
Ingredients:
For cooked apples:
- 1 tablespoon unsalted butter
- 1 ½ apples, peeled and thinly sliced
- ¼ teaspoon ground cinnamon
- 1 tablespoon brown sugar
For oatmeal:
- 1 ½ cup steel cut oats
- 1 tablespoon unsalted butter
- 2 cups hot water
- 1 ½ cups old-fashioned oats
- 3 tablespoons brown sugar
- ¼ teaspoon salt
- ¾ teaspoon ground cinnamon
- ¼ cup milk
- ¼ cup unsweetened applesauce
- 2 tablespoons maple syrup or honey
- 1 teaspoon vanilla
Directions:
Make cooked apples:
Melt butter in a saucepan over medium heat. Add sliced apples, cinnamon, and brown sugar and stir to coat evenly. Cook until the apples are golden brown and caramelized, about 15 minutes, and stir occasionally. Remove from heat.
Make Oatmeal:
Preheat oven to 350°F and set aside a greased baking dish.
Place steel cut oats and butter in a large bowl. Pour hot water over the oats and cover. Allow it to stand for 20 minutes.
After the oats have finished soaking, stir in the old-fashioned oats, brown sugar, salt, and cinnamon. In a separate bowl, whisk together the milk, applesauce, maple syrup (or honey), and vanilla. Add liquid to oats and stir to combine.
Spread cooked apples over the bottom of the baking dish. Pour the oatmeal mixture on top of the apples. Bake for 35 to 40 minutes. Cool slightly before serving.

I love the combo of apples and cinnamon too….now that fall is here I can’t wait to go apple picking. Love walking through the orchard with the boys snacking on apples 🙂
Ok…so yours looks sooooooooo much better than mine did. My oatmeal was not loose at all. It just all gelled together. I will have to give your version a try now!

I’ve been aching to go apple picking too, but having to buy a bushel of apples is the only thing stopping me. Hopefully I can find farm nearby that doesn’t have buying restrictions. What am is a family of 3 going to do with a bushel of apples lol?!

The place we go to they give you big bag and you fill it as much as you want but I believe it’s the same price no matter how much you fill. I usually give some to my brother. Last year Hasan also gave some to his teacher and best friend. I find that b/c the kids picked the apple they end up eating a lot of the apples. It’s so exciting for them to eat what they picked 🙂 My biggest problem is that there are so many varieties but after picking them I have no clue which is which b/c so many look alike. You could make applesauce with some of it….I think you can freeze that….
